6-Stage System

From orchard to ocean.

Stage 01
Raw Procurement
Raw cashew nuts sourced from Kollam-region farms. Each batch assigned a traceable lot code (EC-KLM-YYYY-LOT-XXX) before processing begins.

Steam Shelling
Low-temperature steam softens the shell without scorching the kernel. Preserves natural colour, fat integrity, and flavour — critical for W180/W240 premium grades.

Stage 03
Manual Peeling
Testa (inner skin) removed by skilled workers — 95% female. Manual peeling delivers lower testa-contamination rates than mechanical alternatives.

Stage 04
Size Grading
Kernels graded by count-per-pound into W180, W240, W320 and downgrade fractions (splits, butts, pieces). Each grade packed separately under its own lot.

QA Inspection
Moisture content, breakage percentage, defect rate, and testa count sampled per CODEX Alimentarius CXS 040-1981 cashew kernel standard before packing is authorised.

Final stage
Nitrogen-Flushed Vacuum Sealing

Approved lots packed into 25 kg vacuum-sealed tins (whole grades) or 50 kg bulk kraft bags (pieces, Borma). All tins are nitrogen-flushed before sealing to eliminate oxygen and extend shelf life to 24+ months. Final weight check, labelling, and lot-code stamp applied before palletisation.

Every lot carries a Quality-Control-Approved stamp before it leaves Kollam. Our founding policy has never changed: we concentrate on maintaining quality rather than chasing quantity. A kernel that fails moisture, breakage, or testa tolerance is re-graded — never quietly shipped.

Drum Roasting

The Kollam drum-roast technique.

Eastern Cashew's drum-roasted range is a Gulf favourite — used in premium retail packs under the Royal Nuts brand and in bulk for food service buyers in Kuwait, Qatar, and the UAE.

Drum roasting uses a rotating cylindrical drum over a controlled heat source — kernels tumble continuously for even colour and bite without scorching. The result: a consistent golden-amber roast with lower moisture (≤ 3%) and intensified natural flavour.
